Topping:
  • 2 (400 g) tins of butter beans (drained and rinsed)
  • 2 cloves garlic
  • 60 ml lemon juice
  • Grated rind of 1 small lemon
  • 60 ml olive oil
  • Pinch salt and pepper
  • 1 tsp Fresh Thyme
Topping:
  • 2 (14.11 oz) tins of butter beans (drained and rinsed)
  • 2 cloves garlic
  • 2.02 oz lemon juice
  • Grated rind of 1 small lemon
  • 2.02 oz olive oil
  • Pinch salt and pepper
  • 1 tsp fresh thyme

METHOD

  1. Place all the topping ingredients into a bowl and mash gently with a fork leaving some butter beans whole in the mixture. Taste the mixture and add a little more salt and pepper if necessary.
  2. Preheat the Grill.
  3. Cut the SASKO Rolls into rounds approximately 1 cm thick and place them onto a baking tray.
  4. Drizzle with olive oil and grill on both sides until golden brown.
  5. Place tablespoons of the butter bean mixture onto each toast, drizzle with a little more olive oil and serve.
