Melt a tablespoon of butter in a non-stick frying pan on medium-high heat and fry the bananas, turning once, until golden and just softened. Set aside.
Wipe the pan down and place it back on the heat and add a little more butter.
Soak the slices of bread in the egg mixture on both sides for a few seconds before frying in the pan, turning once, until golden brown.
Place two slices of French toast onto each plate, drizzle over a generous amount of honey and top with fried bananas, a sprinkling of cinnamon and blueberries and a dollop of whipped cream.
